Top Two Tueaday Recipe Style.... YUMMMM

TOP TWO TUESDAY!

Top Two Tuesday is always one of my favorites because I already know my topic for every Tuesday and I always stumble upon new and fun other Top Two Tuesday blogs that I get hooked onto! I have 2 Top Two Tuesday today! One is just a repost of the Undomesticated Momma post! I was feeling extra hungry today and thought I would do some recipes and she just so happened to have 2 I just love so I am posting hers and then 2 of my own! These just look DELISH and not too bad for ya either which helps those of us who are 5 weeks and 4 days from fitting into that wonderfully amazingly hopefully fitting wedding dress!

Top 2 Favorite Summer Recipes!

1. Cliantro Lime Corn Salsa
4 ears very fresh corn
2 vine-ripened tomatoes
1 small red onion, diced
2 jalapeno chiles, minced (save some of the seeds)
2 limes, juice of
1 tablespoon olive oil
1/4 cup chopped fresh cilantro
Chipotle seasoning to taste


2. Caprese Salad
1 large tomato sliced in 8 slices
8 oz fresh mozzarella into 8 slices
5-6 basil leaves sliced
2 tsp olive oil
1 tsp balsamic vinegar
salt and fresh peper to taste
top mozzarella slices with tomatos, olive oil, balsamic, basil, salt and paper

This is also only 100 calories per serving!


I Love that both of these require no cooking, baking or weird ingredients and make a wonderfully healthy low calorie meal (did I mention I have a wedding dress to fit into)

Ok so the Mister and I have decided that when we get married we each have a cooking night where one of us makes a meal and uses new recipes and something different that we haven’t tried before! I thought this was cute because it certainly cuts down on the eating out and porking up but also is a nice way to just spend time together in and try new foods! So here are some recipes I’m wanting to try ohh so badly!

Curried Chicken Salad

2 cooked chicken breasts, boned
6 ounces green beans
12 ounces multi-colored penne
2/3 cup low-fat yogurt
1 teaspoon mild curry powder
1 garlic clove, crushed
1 green chili, seeded and finely chopped
2 tablespoons chopped fresh cilantro
4 firm ripe tomatoes, peeled, seeded and cut into strips
Salt/ ground black pepper
fresh cilantro leaves, to garnish

Directions:
1. Remove the skin from the chicken and cut in strips. Cut the green beans in 1-inch lengths and cook in boiling water for 5 minutes. Drain and rinse under cold water.
2. Cook the pasta in a large pan of boiling, salted water until all dente. Drain and rinse thoroughly.
3. To make the sauce, mix the yogurt, curry powder, garlic, chilli and chopped cilantro together in a bowl. Stir in the chicken pieces and let stand for 30 minutes.
4. Transfer the pasta to a glass bowl and toss with the beans and tomatoes. Spoon over the chicken and sauce. Garnish with cilantro leaves.

WALAA! I LOVE chicken salad in the summer! It just hits the spot for me!!

Miscellaneous Monday Madness

One: It is Monday and although I did have a FABULOUS weekend full of wedding showers I am now completely exhausted and needing a day off to just get myself back in order from this weekend. Which brings me to my next point: I fully believe that we should have the weekends for doing all the fun things we don’t get to do on the weekend- there is always just SOO much to do on the weekend and trying to cram everything in and then go back to work on Monday just doesn’t work very well. So I think we should have Saturday and Sunday’s for play and Monday as get your life back together day (i.e. cleaning, grocery shopping, laundry, paying bills, running errands, etc! Plus Mondays and work just don’t go together very well

Two: I am trying to find cute inexpensive personalized thank you notes on the internet and not having a ton of luck! Or maybe I am but there are just a million of them and all these sites think VERY highly of their thank you notes! So if anyone has any ideas on thank you notes that are cute inexpensive and I can get quickly PLEASE let me know! I would love to get some ordered today!

 
Three: I completely totally utterly am ready to be in our new house. I am an extreme control neat freak so boxes everywhere, clothes everywhere, no decorations up and living in-between a 70 mile radius is driving me NUTS! I am an organizer and perfectionist in my home and I’m ready for our own space and decorated and organized to perfection. Pictures to follow in the upcoming month or so!

Four: I am really not happy about the fact that ABC online episode watching has not been working this week because now I am a week behind on the Bachelorette and so I’m going to be completely lost in tonight’s episode and I hate watching out of order and you see…this goes back to number three- I like things in ORDER!

 
Five: I would be absolutely LOST without Sonic Route 44 drinks.

Six: When will blogger let us have cuter fonts and options? I'm tired of the most boring 6 fonts ever....

It's just that time of Year

Well hello there bloggers! Man it feels like FOREVER since I have been on here and I MISS it! I have been making my rounds trying to catch up on everyone! My life has been EXTREMLY hectic let me know tell you! And this weekend was such a whirlwind and crazines to say the least!

Friday my mom flew in from Ohio! We went STRAIGHT to Hendersonville where I met with the wonderful Becky from Spangler Entertainment



They are absolutely amazing! And it felt soo real going through the ceremony and deciding the musicians playlist to listening to Canon D and the Bridal march to the reception dinner music, party music, cake music, boquet toss music..... I could go on and on! It was just so amazing that we are FINALLY at this point of deciding on the BIG fun things! AHHHHHH

Oh and in case your wondering

5 weeks and 6 Days!!!

I am BEYOND excited for it to finally be here- to have all the stress behind us and to have our lives back to normal, live in the same state, have our girls back (dogs* for clarification) and just finally pick up where we left off a year ago!

OK So back to the post.... Saturday my MOH threw me a bridal shower! It was just so wonderful and cute and pretty and perfect! I was surrounded my all my wonderful close friends and my Mom, step mom, MIL, Aunt in law (?? is that the proper way to say that) Grandma in law and ahhh I just can't say enough! It will be its own post in itself once I get all the pictures from it!

I am one blessed girl!

AHH I feel that I soo need to catch everyone up to speed on my life but it would be one cluster of a post! More to come I promise! I've been a bad bad blogger I know!

Is it Almost over yet......

Hello Blog World!! Long time no blog huh?! I have been sooo incredibly busy as it looks like most of you have been too! What happened to those relaxing summer days sipping fruity drinks by the pool right?!

MMM HMM well if your anytyhing like me this summer has been ANYTHING but that! Current list:

Packing up the apt
Moving to my parents for the next month (long story)
Getting invitations stuffed, stamped and mailed out
Finalizing wedding planning
Getting all the moving details put together
Moving to our new house
Current WORK craziness
3 Bridal Showers
2 Bachelorette Showers
2 Weddings- 1 i am actaully in
*And a lot more BIG details that I can't share just yet!

Needless to say all this ended me up in the doctor this morning with a horrible migraine!

It could always be worse right :)

If any of you have some crazy stresses going on please share! It will make me feel much better!!

This is not a fun post I know- gotta get back to these lovely wedding invitations!!

Soo where have I been- REAL Life post Thursday

So I have been gone since Monday and it seems like FOREVER! Tuesday i went and spend all evening with one of my bridesmaids who just built a new house with her Fiance- which by the way is completely adorable and perfect and I am SOOO happy for her! Yesterday I worked on wedding invitations all evening and just felt a little "not in the mood" kinda day. And well frankly a lot has been going on between Monday and then. As promised I WILL eventually post the second half of my vacation trip with AWESOME stories but today I was reading A Love Worth Waiting For:

Her blog is just so amazing and I know this might sound crazy but her post today just sorta "hit me"  followed by tears and one of "those moments." It talks about being REAL on your blog and if your blog is a true reflection of who YOU are. I must say YES, my blog is truly who I am and my life- the good the bad the ugly. I wear my heart on my sleeve and the littlest things can completely change my day and mood.

Today has been THAT day- Jeremy and I get married in 7 weeks and 3 days (Can you tell I'm excited?? If you knew this man you would understand) But anywho- currently I live in an apartment with a roommate that I knew from college. I certainly do not want to "throw anyone under the bus" as we apparently say in the corporate world but it has not been good. I dread coming home from work, but sometimes dread staying at work. It's that Catch 22 thing! For all you women who are planning a wedding you certainly understand the ENORMOUS STRESS LEVEL 7 weeks out trying to get EVERYTHING done. So coming home and not being happy doesn't help. I have decided that I am going to move home for a month and live with my parents until Jeremy and I get married and move to our new house. I wasn't planning on moving until August 16 but I just can't take it anymore. I need it for me, for my sanity....

So back to my original thought for this post- YES I strive to keep my blog REAL. I am by no means perfect or happy all the time. But I do completely give myself to the Lord and trust in his guidance and love. He always has and will provide for me and I truly believe this is only a test of my strength to make me stronger for my marriage, for myself, for my family and friends.

I will miss my apartment that has been home for over a year, I will miss my 10 minute commute to work, I will miss my 1st place as a working woman taking care of myself, I will miss it all. But I need to move home- for me, for my family and well for the sanity of the Mister! 7 weeks and I will FINALLY be settled. It's been a LONG road but this man I am about to marry is completely worth it ALL! This might seem like a 'no big deal thing' but I promise its a lot more complicated than this- I just don't have the energy to through it all. Packing is tiresome

So here is my point if you are reading this saying "What the heck is she rambling about"

BE HAPPY, Take care of yourself first and foremost. Love your life, live your passions, Live for the Lord. Trust in the Lord. He is the only one that knows what is best for you and I promise you a life with him is far more fulfilled and satisfied than a life without.
