
TOP TWO TUESDAY!
Top Two Tuesday is always one of my favorites because I already know my topic for every Tuesday and I always stumble upon new and fun other Top Two Tuesday blogs that I get hooked onto! I have 2 Top Two Tuesday today! One is just a repost of the Undomesticated Momma post! I was feeling extra hungry today and thought I would do some recipes and she just so happened to have 2 I just love so I am posting hers and then 2 of my own! These just look DELISH and not too bad for ya either which helps those of us who are 5 weeks and 4 days from fitting into that wonderfully amazingly hopefully fitting wedding dress!
Top 2 Favorite Summer Recipes!
1. Cliantro Lime Corn Salsa
4 ears very fresh corn
2 vine-ripened tomatoes
1 small red onion, diced
2 jalapeno chiles, minced (save some of the seeds)
2 limes, juice of
1 tablespoon olive oil
1/4 cup chopped fresh cilantro
Chipotle seasoning to taste
2. Caprese Salad
1 large tomato sliced in 8 slices
8 oz fresh mozzarella into 8 slices
5-6 basil leaves sliced
2 tsp olive oil
1 tsp balsamic vinegar
salt and fresh peper to taste
top mozzarella slices with tomatos, olive oil, balsamic, basil, salt and paper
This is also only 100 calories per serving!
I Love that both of these require no cooking, baking or weird ingredients and make a wonderfully healthy low calorie meal (did I mention I have a wedding dress to fit into)
Ok so the Mister and I have decided that when we get married we each have a cooking night where one of us makes a meal and uses new recipes and something different that we haven’t tried before! I thought this was cute because it certainly cuts down on the eating out and porking up but also is a nice way to just spend time together in and try new foods! So here are some recipes I’m wanting to try ohh so badly!
Curried Chicken Salad
2 cooked chicken breasts, boned
6 ounces green beans
12 ounces multi-colored penne
2/3 cup low-fat yogurt
1 teaspoon mild curry powder
1 garlic clove, crushed
1 green chili, seeded and finely chopped
2 tablespoons chopped fresh cilantro
4 firm ripe tomatoes, peeled, seeded and cut into strips
Salt/ ground black pepper
fresh cilantro leaves, to garnish
Directions:
1. Remove the skin from the chicken and cut in strips. Cut the green beans in 1-inch lengths and cook in boiling water for 5 minutes. Drain and rinse under cold water.
2. Cook the pasta in a large pan of boiling, salted water until all dente. Drain and rinse thoroughly.
3. To make the sauce, mix the yogurt, curry powder, garlic, chilli and chopped cilantro together in a bowl. Stir in the chicken pieces and let stand for 30 minutes.
4. Transfer the pasta to a glass bowl and toss with the beans and tomatoes. Spoon over the chicken and sauce. Garnish with cilantro leaves.
WALAA! I LOVE chicken salad in the summer! It just hits the spot for me!!
